FOOD: Eggs Benedict

Oh, sweet, sweet Saturday, how I longed for you all week long! Been definitely loving the spring-like weather so far, as well!

Flowers are blooming, birds are chirping, and bumblebees are floating around everywhere. It's not "officially" spring until March 20th, according to my calendar -- but, it's fun to pretend that it already is.

After a night of many debacles and moments of laughter I can't keep track of, I thought I'd sleep in some more, when I woke up this morning. Nope! I immediately got up -- first & foremost, for a jar full of iced coffee (mm, much needed) & then, because I was excited to think about what to make for breakfast. I decided on Eggs Benedict with avocado, because truthfully, avocados make the world go around. <3 <3 <3

Twas my second time making this dish at home, and it was still so delicious. Hollandaise sauce is a bit rich (loaded with [delish] calories,) so I use it sparingly when I can. I also like to think of using different ingredients (yogurt, maybe?) to substitute the butter for the next time I make it.

 

Eggs Benedict - RECIPE

Ingredients

For the hollandaise sauce:

・ 4 egg yolks

・ 3 tablespoons lemon juice

・ a dash of worcestershire sauce

・ a pinch of salt + pepper

・ half a cup of melted butter

・ a tablespoon of water

For everything else:

・ toast

・ Canadian bacon / ham

・ poached eggs

・ tablespoon of vinegar

・ sliced avocado (optional)

Directions

1. In a double broiler (boiling water in pan, bowl on top of pan,) whisk the yolks, lemon juice, worcestershire sauce, salt + pepper. Add in half cup of melted butter slowly. Add in water if sauce gets too thick.

2. Bring water in a different pot to a simmer. Add vinegar. Carefully, crack open eggs into the water. Let cook for 2-3 minutes. Using a sifted spoon, transfer eggs to a plate and let them rest.

3. Toast bread, slice avocado, heat up Canadian bacon.

4. You're ready to assemble! Place toast on plate first. Then, add the bacon, poached egg, avocado, in any order you please. Top it off with hollandaise sauce.

 

Already a productive day (which included thrifting!) and still more of it to go! Gonna enjoy the sunshine while it's still here. Happy weekend!
